These muffins are dairy, gluten, and nut free. These are a staple in my diet. You can eat them as a snack or a quick running late breakfast. Another plus to these muffins they have a good amount of fiber too! 

Ingredient list:

  • 3 ripe Bananas
  • 1 teaspoon baking soda
  • ⅓ cup unsweetened apple sauce
  • ½ cup sugar
  • 1 tablespoon of cinnamon 
  • 1 teaspoon of vanilla extract 
  • 2 eggs
  • 1 ½ cups gluten free oat based flour

Directions:

  1. Start by thoroughly mashing up three very ripe bananas. The more ripe the better! I like to use a big fork to mash them up. I find it works better than a whisk or a potato masher. 
  2. Then add in 1 teaspoon of baking soda and mix that thoroughly. 
  3. After that add in ⅓ cup unsweetened apple sauce.
  4. Add in your ½ cup of sugar
  5. Add in 1 tablespoon of cinnamon 
  6. Add in 1 teaspoon of vanilla extract
  7. Add in two whisked eggs
  8. Mix all of that thoroughly.
  9. Finally add in 1 ½ cups of gluten free oat based flour
  10. Mix thoroughly then pour into muffin tin.
  11. Put in the oven at 350 fahrenheit for 18-24 minutes. All ovens are different just make sure to check on the muffins if you push a tooth pick through the middle and it comes out clean then your muffins are ready!
  12. Finally let them cool and enjoy!
