These muffins are dairy, gluten, and nut free. These are a staple in my diet. You can eat them as a snack or a quick running late breakfast. Another plus to these muffins they have a good amount of fiber too!
Ingredient list:
- 3 ripe Bananas
- 1 teaspoon baking soda
- ⅓ cup unsweetened apple sauce
- ½ cup sugar
- 1 tablespoon of cinnamon
- 1 teaspoon of vanilla extract
- 2 eggs
- 1 ½ cups gluten free oat based flour
Directions:
- Start by thoroughly mashing up three very ripe bananas. The more ripe the better! I like to use a big fork to mash them up. I find it works better than a whisk or a potato masher.
- Then add in 1 teaspoon of baking soda and mix that thoroughly.
- After that add in ⅓ cup unsweetened apple sauce.
- Add in your ½ cup of sugar
- Add in 1 tablespoon of cinnamon
- Add in 1 teaspoon of vanilla extract
- Add in two whisked eggs
- Mix all of that thoroughly.
- Finally add in 1 ½ cups of gluten free oat based flour
- Mix thoroughly then pour into muffin tin.
- Put in the oven at 350 fahrenheit for 18-24 minutes. All ovens are different just make sure to check on the muffins if you push a tooth pick through the middle and it comes out clean then your muffins are ready!
- Finally let them cool and enjoy!
